Welcome to Blue Bear Bites! I'm Noelle, the hands and heart behind this little home bakery, in Edna, TX.

Blue Bear Bites came about during a pretty big change in my life.

After several years as an early childhood teacher, my son was born in July 2025, and I traded my classroom for a much different kind of learning—motherhood. Being home with him gave me a slower season, and somewhere along the way, I found sourdough.

It started with flour, water, a little curiosity, and a lot of patience. There were definitely some loaves that didn't turn out quite the way I hoped! But the more I baked, the more I loved it.

I've been making fudge and sweet treats for years, but sourdough introduced me to a whole new kind of creating. I love taking a few simple ingredients, giving them time and care, and turning them into something meant to be shared around a table.

My faith is a big part of why this little business means so much to me. I'm incredibly thankful for this season of motherhood, for being home with my son, and for the gifts God has given me to create and share. Blue Bear Bites is one small way I get to do that.

And behind every good loaf is a good encourager.

My husband, Alex, has been cheering me on from the very beginning. He's the one encouraging me to try the new recipe, bake another batch, or go ahead with yet another bakery idea. As a pastor, encouraging people comes naturally to him, and I'm especially thankful that he brings that same encouragement home. I'm so glad he's along for the ride.

These days, my kitchen is usually filled with the smell of fresh bread, something sweet cooling on the counter, and probably a little flour somewhere it shouldn't be. And I wouldn't have it any other way.
